Olive Oil and Maple Granola
I know, why bother, right? There are at least 100 varieties of granola in the cereal isle of every supermarket in America. All I can say is - try this recipe, and then we'll talk.
Olive Oil and Maple Granola

Ingredients
3 cups old fashioned rolled oats
1 cup hulled raw pumpkin seeds
1 cup hulled raw sunflower seeds
1 1/4 cup raw pecans, coarsely chopped
1/3 cup pure maple syrup
1/2 cup olive oil
1/4 cup packed light brown sugar
coarse salt
1 cup dried fruit (raisins, dried cherries, apricots, dried berries...it's all good!)
Preparation
1. Heat oven to 300º
2. Mix together all ingredients except salt, and spread on a rimmed baking sheet lined with parchment paper. Bake, stirring once halfway through until granola is toasted. 40 min.
3. Remove granola from oven and season with salt. Let cool. Add dried fruit.
Keeps for 1 month. But it will never last that long.
